New potatoes: one of the most underrated and humble summer ingredients

DSC_0002This is one of the quickest yet tasty dinners. One of my favourite summer ingredients is the humble new potato. They are sweet and tiny and when in season you can buy them for pennies at any market. Go home, boil them with some mint and serve with a tiny curl of butter for the best summer side dish to go with almost anything. They are seriously overlooked and underrated in flavour. I put them with a simple mustard pork chop and green beans. Simply add whole grain mustard and onions to make a sauce and grill the pork chops in their own marinade until they crisp. With green beans this was a super quick, but entirely scrummy dinner. I also love to make homemade potato salad with them. Just boil them whole wait for them to cool, chop them up and mix with fresh chives and dill in a lemon and black pepper mayonnaise. Perfect for any BBQ.
