When you think of Thai spices to make a curry, you conjure up images of pestles and mortars and a beautifully coloured array of ingredients. I cheated quite a bit with a pre-blended spice mix but the end result was just as good. We had vegetables to use up so it was quite an unusual mix but it worked nonetheless. Leeks and sweet potatoes combines gave a really sweet touch with the richness of the coconut milk it was super creamy. But I proved once again that I really cannot portion rice correctly, there is always enough to feed a small army!
