Apple and raspberry oat crumble

After buying kilos of apples that didn’t get eaten I needed to make a pudding. Somehow before I knew it I was listening to Robbie Williams and making a crumble. I became my mother overnight! Its such a rare thing for me to make something sweet, its not that I’m not a fan it just not something that crosses my mind until there’s stuff to use up like fresh fruit. I served it hot with ice cream and soon realised that it was pretty much the exact same combination of ingredients as fresh muesli but a lit bit less healthy!

Recipe (serves 6)
400g apples, peeled, cored and chopped into chunks
Handful of raspberries
Handful of sultanas
150g flour
100g rolled oats
100g butter
50g brown sugar

Preparation and cooking time 45mins
In a large pan gently cook the apples on a low heat until they start to soften, then add in the sultanas and raspberries and stir until thoroughly mixed. Heat for another 5 minutes and set to one side.
In a large bowl combine the flour, oats and brown sugar, then chop the butter into small chunks and mix between your fingers until you have a fine mixtures of combined ingredients.
Pour the fruits into a baking dish, prepared with a rub of butter to stop it sticking. Then cover the apple mixture with the oat topping and bake until the top crisps up and the fruit starts bubbling.
Then serve with a big scoop of ice cream and enjoy.DSC_0688
